The five most most exclusive parcels of old vine Shiraz, a secret component of the Barossa's most memorable vintages, hand picked off the De Fazio and Hillview vineyards at Belvidere and Moppa. Batches are crushed into traditional open top fermenters for a week of pumpovers, gently pressed into an extravagantly high proportion of new French oak hogsheads for two years maturation, followed by the final assemblage, unfiltered and unfined. Pirathon»

Merlot by Zema Estate of Coonawarra. The palate displays attractive soft plum and complex berry flavours. The brothers Zema go back a long way with viticulture, their family operated a wine bar in Calabria and Papa worked at Wynn's for over twenty years, planting, pruning and picking. Zema's vines are flattered by a regimen of the most fastidious management, training and pruning is carried out to the most exacting standards and yields are purposely kept low to optimize the quality of harvest. Well structured and showing an outstanding depth of fruit, drinking very well after a few years of bottle age, match it with paella and coq au vin or a farced and well seasoned quail.
