Whole bunches and oak barrel ferments, the costly extravagance of three years tirage on sedimentery yeast lees, each bottle individually riddled by hand, disgorged and sent to cellar for the ultimate indulgence of extra age before release, Pamela is the zenith of the sparkling winemaker's art. Her luxurious effervescence exudes brioche, tarte tatin and French boulangere, her creamy textural mousse unravelling ribbons of rich yeasty autolysis, crème caramel and baked fruits. Wicks»
Campbell's Topaque is the most wickedly intense, lusciously rich elixir, laden with candied peel flavours, honeycombed fruit and amber complexities. Painstakingly crafted to the old world Solera system, a bespoke tradition of fractional blending and elevage, achieving the most indulgent concentration of flavour through a laborious racking of barrels as the angels take their share. Campbells»

Following a visit to France where he studied the ancient pastoral practices of breeding the world's best chickens, Adam Marks gained the inspiration to create great Australian wines in the very same manner, adopting an artisanal approach to production, employing traditional, age old methods. Take a lesson from the well versed Rosé rectors on the Côtes du Rhône and you'll be adding a measure of the arcadian Cinsault grape into your Grenache ferments, conceiving an animate and engaging ochre pink wine. Twice Gold Medal Challenge International du Vin! Moscatel and Gewürtztraminer grapes, grown to estate vineyards on the mountains of the Upper Penedes, form the backbone of fruit for Viña Esmeralda, a delicate but strunningly fragrant wine. The dry fig and raisin characters of Moscatel de Alejandría give Esmerelda it's luscious and flavourful palate, fleshed out by the orange of Frontignac or Moscatel de Grano Menudo as the Spanish say, further enhanced by the complex aromaticness and spice of the vivacious Traminer.. Bellingham Estate is located at Arthur's Seat adjacent to Main Ridge on Victoria's Mornington Peninsula

Established by Moorooduc Estate's chief winemaker, Bellingham Estate vineyard is one of the highest sites on Mornington Peninsula, a location that's ideal for the production of cool climate wines. Bellingham remains a small, family run operation which has earned an enviable reputation for some of the region's finest wines. After many vintages of making Mornington's most successful brands, including Main Ridge and Ten Minutes by Tractor, Bellingham can focus on treating the pick of Mornington's harvest with the most atisanal standards of winemaking.

The two and a half acre, single hectare vineyard was planted in 1996 to Pinot Noir. The vines are now fully mature and are producing harvests of the most complex and flavoursome fruit. Viticultural techniques include the laborious Cane Pruning method, it's added hard work and very time consuming but is well worth the effort if you're after the highest quality fruit. The winemaking style favours wild yeast ferments and minimal intervention, with a nod to traditional Burgundian techniques, which allow the wines to express their site specificity and terroir.

Bellingham Estate are all about preserving the excellence of mature vine fruit, through the time honoured traditions of fastidious husbandry, low yields and minimalist winemaking practices. Controlled harvests of the most outstanding Mornington fruit, sensitive winemaking and the finest French oak make wine of complexity and grace.
